This recipes is super light and delicious.  Perfect for a hot summer night and perfect if you have leftover chicken.

Healthy Chicken Salad in Romaine Boats

Ingredients
  • 100 Grams Boneless Skinless Chicken Tenderloin Pan Roasted and Chopped (use Roasted Chicken Recipe)
  • 1 Celery Stalk Fine Diced
  • 2 stalks green onion
  • 1.5 TBS Greek Yogurt
  • Salt/Pepper
  • 4 large Romaine Leaves (Boats)
Instructions
  1. In a bowl, toss together celery, onion, Greek yogurt, and chopped chicken, and season. Mix with spoon until well combined.
  2. Spoon it into the whole romaine leaves and garnish with basil or thinly chopped lettuce.
