These deliciously green jellies are a fun and playful way to get your daily serving of veggies. It’s the perfect way to make your veggies smoothie into something new (Low Carb, Low Cal, P2)!
Ingredients
  • 2 cups spinach
  • 1/2 apple
  • 2 cups water
  • 1/2 tsp stevia glyserite
  • 3/4 tsp natural flavoring (I used pineapple)
  • 2 1/2 tbsp grass-fed gelatin
  • 1/4 cup cold water
  • 1/2 cup boiling water
Instructions
  1. Bloom gelatin by sprinkling it over 1/4 cup cold water. Set aside.
  2. Boil water enough to produce 1/2 – 1 cup
  3. In a blender combine spinach, apple, stevia and 2 cups water. Pulse then blend until smooth. If desired strain pulp with a wire sieve.
  4. Slowly pour in about a half cup of boiling water into bloomed gelatin while mixing vigorously with a whisk. Once fully mixed, slowly add in green juice and additional flavoring. Taste and adjust flavoring and sweetness as desired.
  5. Line a 8×8 dish with parchment paper and carefully pour mixture into dish. Let set at least 2 house in fridge or kickstart the process by sticking it in the freezer for 20 mins.
  6. Once solid, slice and enjoy!
Notes
If you want it really solid (less jello jigglers, more gummies) add an extra 1-1.5 tbsp gelatin.
