Beef and Bell Pepper Stir Fry with Cauliflower Mash

A super flavorful dish that will fill you up when your are super hungry.  The beefy bell pepper stir fry is so flavorful that you can eat less meat and more cauliflower if you need a lower calorie option.

Most of the time, Tara cooks dinner and help where I can and do the dishes.  She’s a chef, loves and makes amazing food I always enjoy.  But last night she had to work a 16-hour day and asked if I could make something for dinner.  I thought about what we had in the fridge, how much time I had to cook and ended up with this ground beef, bell pepper and onion stir “fry” with a side of cauliflower mash (my FAVORITE).

Although Tara is 10 times better and more creative in the kitchen than I am, she has taught me some tricks for whipping together a meal without a recipe.

  1. Check the fridge – what do you have on hand that can be used?
  2. Keep it simple – you only need a few flavorful ingredients to make something taste really good
  3. Well-seasoned food is delicious food – we use at least 2 of the following in almost every recipe we make: salt, pepper, garlic and onion powder, red chili flakes.  Add a little bit at a time and taste if your worried about over seasoning.

I had bell peppers in the fridge that were getting close to the point of over-ripe.  I knew Tara was going to be super hungry and wanted to make something that would be a larger portions so I decided on a stir fry with cauli mash side.

I also decided to make a large batch since Tara, my mom, my brother-in-law and myself are all on P2 right now.  Both of these item reheat really well.

Beef and Bell Pepper Stir Fry

Ingredients
  • 3 red bell peppers (seeded and chopped)
  • 1 onion (chopped into 1/4 inch pieces
  • 2.5 lbs 93% lean ground beef
  • 2 Tbsp. Braggs liquid aminos
  • 1/4 cup chicken broth
  • Salt and pepper to taste
Instructions
  1. Place a large skillet on the stove and turn it to high. Let it heat up until it get really hot. Add meat and let meat brown while stirring the meat so it nice and browned and crumbled (about 5-10 minutes depending on how big your dish is).
  2. While meat is cooking chop up all your veggies. Once meat is browned, remove meat from pan. Add in veggies and roast veggies for 5-10 minutes. I like a roasted flavor so I let mine go for 10.
  3. Add meat back to pan and add the liquid aminos and chicken broth. Reduce temp to low and let simmer uncovered for another 5-10 minutes or until all the liquid is evaporated.
  4. Taste and season as needed.

 

Cauliflower Mash

Simple, yummy low-calorie cauliflower mash that taste just good as mashed potatoes
Ingredients
  • 1 head of cauliflower (rough chopped)
  • Salt and pepper to taste
Instructions
  1. Add rough chopped cauliflower to a microwave safe bowl, cover with plastic wrap and microwave on high for 8 minutes. The cauliflower has enough water in it that you don’t need to add any.
  2. During the last minute heat skillet on high. If you already cooked some type of meat feel free to leave all the cooked-meat bit in the pan for extra flavor. If you are making this by itself you can add in some chicken bullion (sugar free) or chicken or beef base.
  3. Toast cauliflower over medium head and mash with a masher to desired consistency. I
